Nutritious Banana Pancakes

Super quick 3 ingredient pancakes great for breakfast for the whole family and also a good lunch box filler or snack for kids. A good source of protein, fibre and slow releasing energy to start the day well.

Ingredients:

1 large banana

3 eggs

1 cup wholegrain oats

Optional nutrition booster add 1Tbl of LSA (ground linseed, sunflower seed, almonds)

Blend all ingredients together (we use our nutribullet) Cook spoonful's of batter in a little coconut oil over medium high heat.

Serve with plain unsweetened yoghurt and warmed berries.
