Mindfood's Maca Energy Balls

Recipe: 1 cup cashews, 1 cup desiccated coconut, 2tbsps Maca Root Powder, Half tsp vanilla bean paste, 8 fresh medjool dates - stones removed, 6 pitted prunes, 1 tbsp Virgin coconut oil, 2 tsp goji berries

Method:

1: Process finely cashews & coconut in a food processor.

2: Add maca powder,vanilla paste and pinch of salt. Pulse to combine.

3: Roughly chop and add dates and prunes and coconut oil. Process until mix holds together.

4: Lastly add goji berries and pulse half a dozen times.

5: Roll into walnut sized balls.

6: Refrigerate in sealed container and eat within 5 days.
