Ottolenghi Inspired Rainbow Salad

This salad is loaded with raw vegetables. You can simply buy pre cut rainbow slaw and then add the dressing and toppings which include fresh flavours of lime, coriander, mint, mango and toasted sesame and peanuts. Absolutely outstanding flavours and very easy to throw together. Perfect for stress free dinner parties.


Ingredients:

4 handfuls of Rainbow Salad (Buy pre made or finely slice carrot, beetroot and cucumber)

1 Mango peeled and finely sliced

Dried Seaweed sliced into strips

1 handful toasted and chopped peanuts

2 Tbsp toasted sesame seeds

1 handful of fresh coriander and mint leaves


Dressing:

1 knob of fresh root ginger finely chopped or grated.

4 Tbsp rice wine vinegar

1 Tbsp mirin or caster sugar

2 tsp lime juice (fresh or concentrated, or use lemon instead)

1 Tbsp peanut oil


Method:

Place the rainbow salad in a serving bowl with the mango.


Mix through the peanuts, sesame seeds and coriander and mint leaves


Mix the dressing ingredients together and toss through the salad just before serving. Place seaweed strips on top.
