Kids Banana Bread Laced with Carrot

This nutritious version of banana bread is a winner with our 21 month old daughter. This recipe contains half the sugar normally found in a banana bread recipe and contains the goodness of oats, carrots and greek yoghurt. Give it a go and let me know if it was a success with your kids too!

1 cup standard flour

1 cup quick oats

1/4 cup brown sugar

1 and 1/2 tsp baking powder

1 tsp cinnamon

1 tsp vanilla essence

1 large banana mashed

1 large carrot grated

2 eggs

150g plain unsweetened full fat/Greek yoghurt

Combine the flour, oats, sugar, baking powder and cinnamon in a large bowl.

Add the vanilla, mashed banana, grated carrot, eggs and yoghurt and mix until just combined.

Pour into a greased loaf tin.

Bake at 180 degrees Celsius for 40 - 45mins until golden.

Allow to cool in the tin before removing.
