Vietnamese marinated butterfly prawns


Travelling through Vietnam (pre kids!) I absolutely fell in love with Vietnamese cooking, especially the tangy fresh flavour combination of limes, mint, garlic, fish sauce and red chilli mmmmmmm.


Ingredients:

20 uncooked prawns


marinade:

4 T fresh lime juice

zest of 2 limes

3 T fish sauce

2 red chilli finely sliced

2 cloves garlic crushed


Method

Combine all marinade ingredients, coat Prawns in marinade and place in the fridge for an hour.


BBQ or grill marinated prawns until just cooked.


Delicious served with a mango, avocado salad.
